Cheese Manicotti

Ingredients
4 manicotti shells1/2 cup of mushrooms2 cloves of garlic1/2 cup of fat-free ricotta 1/3 cup of reduced-fat mozzarella cheese 1 eggParmesan cheese1 cup of desired sauce
Directions
Preheat oven to 350. Meanwhile, cook manicotti shells according to package directions; drain Rinse with cold water and drain again. Set aside.

Meanwhile, for filling, coat an unheated large nonstick skillet with nonstick cooking spray. Preheat over medium heat. Add mushrooms and garlic to skillet. Cook 3 to 5 minutes or just until vegetables are tender. Remove from heat and cool. Add ricotta cheese, most of the mozzarella, egg, parmesan cheese, and Italian seasonings. Spoon filling into cooked manicotti shells.

Spread about 1/3 of the sauce into the bottom of an ungreased baking dish. Arrange stuffed manicotti shells in the dish. Pour remaining sauce over manicotti.

Bake, covered, for 25 minutes, or until heated through. Uncover and sprinkle with remaining mozzarella cheese. Bake for five minutes more. Let stand for 10 minutes before serving.
