Spicy White Bean Soup with Gourmet Mushrooms for Four

Ingredients
˝ onion, diced2 cloves garlic2-teaspoon canola oil4 cups water1 box raw wild rice1 cup canned white beans, drained and rinsed1 ˝ teaspoons Fresh oregano˝ teaspoon ground cumin˝ teaspoon ground ground cloves˝ teaspoon ground cayenne pepper10 ounce Polar® Gourmet Mushrooms in brine Dr.Wt. jar 6 oz., drained2 tablespoons chopped parsley2 ounces Mozzarella cheese
Directions
1. Sauté chopped onions with fresh garlic in oil, add water, rice, beans, and season with oregano, cumin, ground cloves, and cayenne pepper to taste
2. Simmer for about 50
minutes.
3. Add Gourmet Mushrooms; simmer for 10 more minutes.
4. Top with chopped parsley and Mozzarella Cheese and serve.
