Mikaeela's low-fat and sugar free mini muffins

Ingredients
120 g oatmeal70 g barley flour1 tsp baking powder0.5 tsp baking soda0.5 tsp salt2 tsp cinnamonliquid stevia (to taste)30 g ground flaxseed7.5 tsp poppy seeds75 g raisins180 g apples300 ml buttermilk150 g applesauce10 g ground carob
Directions
1. In a large bowl stir oatmeal, raisins and ground flaxseed together with buttermilk.
2. Preaheat oven to 190 C and prepare a mini muffin pan.
3. Combine other dry ingredients in a separate bowl.
4. Peel and cut apples into small pieces.
5. Stir applesauce and an egg into buttermilk mixture. Now add dry ingredients. Combine carefully.
6. Use a small spoon to put batter into muffin pan. Bake in preaheated oven for about 20 minutes.
