Peanutbutter and Raisin Cookies (Vegan)

1/2 cup maple syrup1/2 cup sucanat1/2 cup organic peanut butter1/2 cup Earth Balance buttery spread1/2 cup raisins1 tbsp milled flax seed1 1/4 cups whole wheat flour3/4 tsp baking soda1/2 tsp baking powder1/4 tsp salt
1. Mix milled flax seed with 3 tbsp hot water and let stand about 3 minutes.
2. Mix sucanat, maple syrup, peanut butter, earth balance, and flax seed mixture and raisins in a large bowl.
3. Stir in remaining ingredients.
4. Refrigerate dough until firm (about 2 hours)
5. Preheat oven to 375F.
6. Shape dough into 1 1/4 inch balls.
7. Place about 3 inches apart on cookie sheet
8. Flatten balls with fork tynes.
9. Bake 9-10 minutes or until golden brown.
10. Cool for 5 minutes before removing from cookie sheet.
