Chicken Salad, Low Carb

Ingredients
2 cups cooked chicken, cut in bite-sized pieces2 stalks celery, chopped ½ cup mayonnaise Salt, to taste 1/8 teaspoon pepper Ό cup black olives, optional
Directions
1. Mix all of the ingredients. Chill well. Serve on a large leaf of lettuce.

OPTIONAL ADDITIONS (count the additional carbs):
• Chopped hard boiled eggs
• A little lemon juice
• Chopped green onions
• Diced cucumber
• Dill or sugar free pickle relish
• Cashews or sunflower seeds or other nuts
