Apple & Blueberry Flan/Muffins

Ingredients
7 Medium apples peeled and chopped2 Tbs Light Olive Oil2 large eggs2 tbs milk3/4 cup sugar2 tsp Lemon Zest1 tsp Vanilla essence1 Cup Self Raising Flour1/4 Cup Almond meal1/2 cup frozen Blueberrys
Directions
1. Peel and chop apples
2. Whisk eggs and oil
3.Stir in milk, sugar, lemon zest and vanilla
4. Add flour, meal and apples and stir till apples coated
5. Quickly stir through blueberries
6. Spoon into individual flan cases or muffin tins
7. Bake 20 minutes till golden brown and centre of flans firm
8. Stand for 15 minutes before turning out.
