White Bean Chicken Chili

2 tbsp EVOO1 cup chopped onion1 pound chicken breasts2 cans white beans1 can diced tomatoes with chiles1 can low sodium chicken broth1 tbsp cumin1 tbsp chili powder1 tbsp minced garlic1 tsp pepperdash salt4 oz (1 cup) shredded monterey jack cheese with jalapenos
1. Cube chicken and saute with EVOO, onion and garlic.
2. Drain any excess juices.
3. Add remainder of ingredients except the cheese.
4. Bring to a boil, reduce heat and cover.
5. Simmer for 30 minutes, stirring occasionally.
6. Slowly stir in shredded cheese.
7. Serve immediately with dollap of sour cream (not included in nutrition info.)
