Fish with mustard sauce over spinach

2 tilapia fillets2 tbsp 3-cheese ranch dressing1 1/2 tbsp plain yogurt3/4 tsp prepared mustard4 oz fresh baby spinach
1. Prepare oven to 400 degrees.
2. Rinse the fish and pat dry with paper towels. Place in a small glass dish.
3. In a small bowl, stir together the salad dressing, yogurt and mustard. Spoon evenly over the fish.
4. Bake for 8-10 minutes, or until fish flakes easily with a fork.
5. Meanwhile, remove stems from spinach; rinse thoroughly and drain well.
6. Heat a nonstick skillet over medium high heat. Cook spinach for 30 seconds or just till wilted, stirring constantly.
7. Arrange spinach in a single layer on serving plate. Top with baked fish. Serve immediately.
