1 cup green peppers1 cup red Bell peppers1 Raw red Onion1/2 cup chopped green beans (Optional)1/5 box of Tofu (Drained and stir-fried)Chick peas (Optional)1 tbsp home made Vegan Basil pesto1 tbsp EVOO.
Cut the vegetables in 1" squares.
Stir fry Tofu
Stir fry the vegetables in Olive oil and add Tofu when they are done. Let Tofu absorb the water from the vegetables.
Add a tbsp of Basil or Spinach pesto.
Ready to eat
