Meatball & Mushroom Casserole

Ingredients
20 oz 95% lean Ground Beef1 cup plain bread crumbs (try whole wheat)1 onion, diced4 egg whites1 cup whole mushrooms, canned, drained and rinsed1 tsp Italian seasoning3.5 cups No Salt Added Tomato Sauce (Hunts) 1 cup grated, parmasean cheese
Directions
Preheat oven to 375. Heat a large skillet over medium heat. Spoon about a half cup of sauce into the bottom of a 9x13 baking dish, set aside.

Combine ground beef, bread crumbs, egg whites and onion in a large bowl. Form beef mixture in to 24 meatballs. In batches, brown the outside of the meatballs in the skillet and transfer to the prepared 9x13 baking dish. Once all meatballs are in the dish add the rinsed mushrooms throughout the meatballs. Cover in the remaining tomato sauce.

Bake at 375 for 20 minutes. Add parmasean to the top for the last 4 minutes, until melted.

Serving Size: Makes 4 servings of six meaballs and three mushrooms each
