Vegan Applesauce Pancakes

Ingredients
Dry Ingredients:2 cup Flour2 tsp Baking Soda1 tsp Salt1 tsp Ground Cinnamon 1/2 tsp Ground GingerWet Ingredients:1 cup Applesauce1 cup Almond Milk2 tbsp Canola Oil
Directions
Start heating griddle over medium low fire.

In medium mixing bowl, whisk together dry ingredients til thoroughly mixed. Make a dent in the center of the mixture. Set aside.

In another medium mixing bowl, whisk wet ingredients , til thoroughly mixed. Pour into dent in dry ingredients and whisk til thoroughly moist. Mixture should be lumpy, will be a thick batter.

Sprinkle a bit of water onto griddle. If the water sizzles, the pan should be hot enough to use. I don't oil the pan when making pancakes. If the griddle is hot enough they shouldn't stick.

Use a 1/4 cup measure to drop batter onto pan. It should make 4 inch pancakes. These will not bubble up like thinner batter. You will get a couple of bubbles. Everyone's stove is different. Cook for 30 - 45 seconds on each side.
