Southern Baked BBQ Chicken

5 pounds of boneless skinless chicken breast1 bottle of Sweet Baby Ray's Hickory Brown Sugar BBQ Sauce4 cups Kroger, 3 pepper and onion blend (frozen)3 cups diced, raw potatoes (2 cups if you dice them larger)2 chopped garlic cloves (I love garlic)Black Pepper to taste.Deep Ceramic/Stone Casserole Dish, with Lid.Cooking spray.
Pre-heat Oven to 350 degrees.
1.Rinse Chicken Breasts, and cut into cubes or nuggets
2. Spritz bottom of Casserole Dish with Cooking Spray.
3. Add chicken to sprayed dish, and pour entire bottle of Sweet Baby Rays BBQ Sauce, on top. Mix together.
4. Open frozen peppers and onions, pour into dish.
5. Add diced potatoes and carrots.
6. Add chopped garlic.
7. Stir all ingredients together until well blended.
8. Black Pepper to taste, mix a little.
9. Place Lid on Casserole Dish, and put it in the oven!
Cook for an hour, or longer depending on how tender you like your chicken.
Serving Size: Makes 20, 4 oz servings.
