Graham Cracker Banana Mini Muffins

Ingredients
2 2/3 cup graham cracker crumbs1/4 cup white sugar2 tsp baking powder1 large egg1 cup milk (I use 1%)2 tbsp honey3 small bananas, ripe & mashed
Directions
Preheat oven to 350
Mix graham crackers with sugar and baking powder
In a seperate bowl, mix egg, milk, honey and bananas
Blend the wet ingredients with dry ingredients
Lightly spray each of the muffin cups of a 24-mini muffin pan with non-stick spray
Fill each muffin cup with mixture
Bake at 350 degrees for 15 minutes

Experiment with different graham cracker flavors - chocolate, cinnamon. Crush in a Ziploc baggie
About 16 crackers = 2 2/3 cup crumbs
