Egg-Free Bread Pudding - Kid friendly

Ingredients
*100% Whole Grain Bread, Dempster's Ancient Grains 1 Slice, 10 serving *Lactaid 2% Milk, 3 cup Banana, fresh, 2 small (6" to 6-7/8" long) Cinnamon, ground, 1 tbsp Granulated Sugar, .75 cup *Tapioca Starch, 1 tbsp
Directions
Pre heat oven to 350, rip up 6 cups of Whole Grain (I used Ancient grains) bread (about 10- 12 pieces) and place in bowl. Mix other ingriedients in a small bowl until well blended. Pour wet over bread and mix well - let soak untill oven is ready about 5 mins. spray an 8 or 9" square pan and pour mixture into this. Bake at 350 for about half an hour maybe a bit longer - untill brown and somewhat firm.

This has a nice consistancy, it it pudding like but not to runny.
Serve warm, but let it cool a few before serving so it keeps it's shape.
