3 cups unfiltered apple cider (I like Barsotti - use something "pulpy"!)1 cup water (too much of the pulp makes the rice smooshy - make sure to stick with 1 cup water - I use this so the sodium content doesn't go thru the roof like it would with broth)2 cups Lundberg Wild Blend riceKosher Salt, to taste
Add all ingredients to a large pot
Bring to a boil
Turn temperature down to low
Cover with lid
Cook for 50min
Let rest for 5min
Fluff with fork & serve
