Great Gluten Free Sandwich Bread

Ingredients
.80 cup brown rice flour.80 cup cornstarch.60 sorghum flour.30 masa harina1 Tbsp. bread machine yeast1 Tbsp. sugar1 1/2 c. 1% milk (105 degrees)2 tsp. xantham gum1 tsp. salt3 eggs (at room temp)1 1/2 Tbsp. extra virgin olive oil1 tsp. apple cider vinegar
Directions
Make the flour by mixing the first 4 ingredients listed in a mixer bowl.
Combine the yeast and sugar in a small bowl. Add the milk while gently stirring the yeast and sugar. Let this mixture sit while you mix the rest of the ingredients -- bubbles and foam should form if the yeast is happy.
Add the xantham gum and salt to the flour mixture in the mixer bowl.
In a third bowl, whisk the eggs, oil and vinegar until the eggs are a bit frothy.
By this point, the yeast mixture should be foamy, so you can pour the two liquid mixtures into the flour mixture. Blend the dough with a mixer for 4 minutes.

Conventional Oven Directions:
Scoop the dough into a greased loaf pan. Allow the dough to rise in a warm area until it is about 1 inch from the top of the pan. Bake at 375 degrees 45 min - 1 hour or until done.
