Sliced Steak Stuffed with Spinach, Onions and Mushrooms

Ingredients
8oz Top Round Steak, thinly sliced (2 4oz pieces)1c mushroom slices1 whole medium onion, sliced1c chopped spinach1tbsp light buttery spread (like Smart Balance)2 wedges Weight Watcher's Swiss Cheese1tbsp fat free sour cream.5tsp Italian seasoningSalt, to tasteBeef gravy (optional, not included in nutritional info)
Directions
Heat pan to medium heat.
Add buttery spread, sliced onions and mushrooms. Few dashes of salt.
Cook until onions are almost translucent. 7-10 mins in my experience.
Take off heat and transfer to bowl. Add cheese wedges, breaking into pieces as you add. Add sour cream and stir until melted and combined. (Sometimes needs a quick zap in microwave, 30 secs).
Add Italian seasoning and salt (to taste) to mixture. Stir.
Lay 2 pieces thinly sliced steak on cutting board.
Place 1/2 mixture close to one end of steak. Roll from the end containing the mixture to make a bundle and secure with toothpicks.
Heat pan to medium-high heat. Also preheat oven to 350.
Quickly brown bundles on all sides, this will move quickly!
Transfer to lightly greased baking sheet. Cover with foil.
Cook in 350 degree oven for about 25 mins.
Enjoy!

You can drizzle with beef gravy if you prefer, but this recipe is so moist you probably won't need to!

I promise this recipe is not as much work as it sounds and the creamy, cheesy, guilt-free goodness when you slice into this steak is awesome!
