2 cups pumpkin puree2 cups whole wheat flour1 cup quick cook oats3/4 cup sugar2 tsp baking soda1/2 tsp baking powder2 tbsp pumpkin pie spice1 tsp salt1 cup applesauce (unsweetened)3 eggs
1.Preheat oven to 350F (175C). Grease 12 muffin cups or line with paper muffin liners.
3.Stir together dry ingredients. In a separate bowl, beat together wet ingredients. Stir into flour mixture just until smooth. Scoop batter into prepared muffin cups.
4.Bake for 20 to 25 minutes, until a toothpick inserted into the center of a muffin comes out clean.
