Buttermilk Pancakes

Ingredients
1 c. flour1 c. milk1 egg1 tbsp butter, melted1 tsp baking soda1 tsp salt1 tbsp vanilla sugar1/2 squeezed lemon1 tbsp butter (for griddle)
Directions
Mix lemon juice and milk. Set aside. Mix dry ingredients. Wisk egg into milk and lemon juice, then add dry ingredients gradually. Mix in melted butter. Don't over-mix - the mixture should be uniform, but bubbly. Melt bits of butter in hot skillet or griddle, pour mixter into centre and flip once when edges are solid and bubble in middle have popped (approximately 1 minute). Serve w/ favorite pancake toppings.
