Sugar free, buckwheat banana muffins with chocolate chips and walnuts

3 bananas2 eggs1 tsp. vanilla2 tsp. cinnamon1/2 tsp. nutmeg1/4 tsp. salt1/2 tsp. baking soda1/2 tsp. baking powder1 cup buckwheat flour, plus more if necessary1/4 cup chocolate chips1/4 cup walnuts
1. Combine bananas, eggs, vanilla and spices.
2. Sift baking soda, powder and 1 cup of flour.
3. Stir dry ingredients into wet ingredients.
4. Add additional flour if needed to make it fairly thick.
5. Fold in chips and walnuts.
6. Divide evenly into 12 muffin tins.
7. Bake @ 350 for 15 - 20 minutes or until golden brown, or
to your liking.
