Vegetarian Meatloaf Muffins

Ingredients
24 oz seitan, ground 1/4 cup egg white1 small onion, chopped very finely1/2 cup chili sauce1/2 cup plain dry bread crumbs1/2 tsp. chili powder1/2 tsp. saltpinch of freshly ground black pepper
Directions
preheat oven to 350. Spray 12 muffin cups with nonstick cooking spray. In a large bowl, combine the ground seitan, onion, egg white, chili sauce, bread crumbs, chili powder, salt, and pepper. Use your hands to combine the mixture well. Moisten your hands with cold water. Shape the meat loaf mixture into 12 balls and place each in a muffin cup. Bake for 40 minutes. Serve with a kid friendly vegetable, such as carrots. Ketchup is the sauce of choice for dipping! This recipe is a vegetarian, altered version of a recipe that appeared in American Baby magazine november 2004.
