Zucchini, onion & bacon fritatta

1 slice turkey bacon1 large egg1/4 cup egg substitute (that is all I had on hand)1/3 cup zucchini1/4 cup chopped onion 1/8 cup mozzarella
Preheat oven to 375.
In a small cast-iron skillet cook 1 slice of bacon. Set aside an in same pan saute onion and zucchini till desired doneness.
Once cool enough to handle, piece up the bacon into bite sized pieces.
In a small bowl mix the eggs, mozzarella and bacon. Add to the zucchini mix and cook on the stove till the edges are set. Then transfer to the oven for 5-10 minutes till the eggs are set in the middle.
