1 T EVOO1/2 tsp cracked Black Pepper1-2 garlic cloves, depending on your taste1/2 med red onion chopped1/2 large red pepper, cut into strips1/2 tsp dried basil(or several leaves of fresh)1 15 oz can stewed tomatoes1 15 oz can garbonzo beans, drained and rinsed thoroughly.
Heat olive oil with black pepper(I prefer fresh ground). Saute onion, red pepper and garlic in olive oil till soft. Drain and rinse beans thoroughly. Add beans and tomatoesand basil to sauted vegetables. Simmer till hot through and through.
