2 cups buttermilk 1 cup flour 1 egg 1 teaspoon baking soda 1/2 teaspoon saltplus 4 Tablespoons canola oil for the griddle
In small mixing bowl, combine all of the ingredients except the canola oil, and mix well. Use the canola oil one Tablespoon per batch, to oil the griddle. Pour by spoonfuls onto a hot, oiled griddle, it will take four batches to cook it all. Spread the batter with the back of the spoon to make thin, crepe-like pancakes. Cook until the batter is bubbly.
