Low Carb Beef Stroganoff

1 Tbsp Oil1 tsp black pepper2 lbs chuck, cut into 1-in cubes (use kitchen shears!)1 cup diced onion8 oz canned mushrooms1 cup beef broth2 Tbsp mustard powder6 oz Greek Yogurt3 Tbsp heavy cream (optional)
Heat the oil on high in a large wok or pot. Add the pepper and let it fry for 30 seconds, then add the beef and sear it. Take the beef out of the wok and fry the onions until brown.
Once brown, add the mushrooms and cook for three minutes.
Take the onions and mushrooms out of the wok and pour in the beef broth. Once it is warm, add the mustard powder and mix it well. Add the beef, mushroom, and onion mixture and mix well, then cook until the meat is done. Add the Greek yogurt and sour cream at the end, making sure it does not boil.
Serving Size: Makes 6 generous servings
