Apple Chicken Salad

Ingredients
1 whole boneless, skinless Chicken Breast1/3 cup Granny smith apple peeled, cored and chopped1/3 cup dried Cranberries2 TBS Olive Oil1/8 tsp Thyme, fresh1/4 cup Applesauce, unsweetened1/2 of a small FRESH Tangerines, (mandarin oranges), Handfull of chopped walnuts IF DESIREDThe original recipe calls for 3/4 cup Stonewall Kitchen Roasted Apple Grille Sauce-I had to substitute the applesauce
Directions
In a deep skillet, cover chicken with water. Bring to a gentle boil and simmer until the chicken breasts are cooked through. Cool

Chop the chicken into bite size pieces.

Combine all the ingredients and serve chilled on a croissant or crusty bread as a sandwich or over salad greens.

Serving Size: Makes about 6-8 1/2 cup servings but USE COMMON SENSE
