Cheat's Seafood Laksa

1T Canola Oil 1T Ginger Root 1t Fish Sauce 1t Sugar 100g Mixed Seafood 1/4 bunch of Broccoli 50g Rice Vermicelli2T Cilantro 1T Peanuts 1T Red Curry Paste 1/2c Coconut Milk 1/2t Ground Coriander
Heat oil in saucepan and add curry paste and ginger for 2-3 min.
Stir in the ground coriander, 2c water and coconut milk and simmer 10 min. Add the fish sauce and sugar.
Add the seafood. Cook 2 min. Add the broccoli and cook about 1 min.
Soak the noodles in boiling water for 1 min. Drain and add to laksa. Top with cilantro and chopped nuts.
Serving Size: Makes 1 serving.
