1 beef soup bone3 chopped onions1 minced clove garlic1 stick Portuguese chourico, choppedA bunch of kale, stems removed and chopped1 small head of cabbage, chopped2 1/2 quarts low sodium beef broth1 can red kidney beans, rinsed and drainedsalt & pepper to taste
Combine all ingredients EXCEPT kidney beans in a large soup pot. Bring to a boil then cover and simmer for at least 3 hours. Add more water or broth if needed. Remove beef bones and chop the meat and return to the pot with the can of kidney beans. Salt and pepper to taste. Heat through and serve.
