Gluten- and Dairy-Free Oatmeal Raisin Cookies

Ingredients
1/2 c. Earth Balance buttery spread1/2 c. white sugar1/2 c. packed brown sugar1 egg1 egg white1/2 t. vanilla1 c. gluten-free flour mix1/2 t. baking soda1 t. baking powder1/4 t. salt1 t. cinnamon1 1/2 c. oatmeal1/2 c. baking raisins
Directions
Cream sugar, eggs, and vanilla. In a separate bowl, mix flour, baking soda, baking powder, salt, and cinnamon. And dry mixture to cream mixture, combine well. Add oats and raisins. Cover and refrigerate at least two hours. Roll into one-inch size balls and place on greased cookie sheet. Bake at 350 for 8-10 minutes.

    Probably would have given this 5 stars if I had followed the directions exactly however I put more baking soda and powder in hoping for a bigger rise but all it did was make them crumble more mine were very crumbly! But the flavor was excellent - 2/17/12
