1 lbs dried pinto beans, 6 strips bacon ( chopped), 2 cloves of garlic (chopped), 4 medium plum tomatoes (chopped), 1 green bell pepper (chopped), 12 oz light beer, 1/2 bunch fresh cilantro (chopped), 2 jalapeno peppers (seeded and chopped). salt and pepper to taste.
rinse and pick over beans. bring beans to a boil in a large pot of water and cook over medium heat for 1 1/2 - 2 hours until tender, but firm. Drain. Before beans are done cooking, fry the bacon until crisp, add onions, garlic and pepper. Continue cooking until onions turn soft. Add tomatoes, beer and beans. Add water or chicken broth and simmer a few more min., or longer if you like your beans softer. Add chopped cilantro and jalapeno peppers. salt and pepper to taste.
