Zone-like Chocolate Muffins

Ingredients
1 cup soy flour1 cup blended oatmeal. Measure 1 cup of regular oatmeal and blend until a powder.1/2 cup cocoa powder - rounded if you like chocolate!1/2 cup fructose79 grams of whey protein1 TBS baking powder1 tsp salt1.5 cups 1% milk4 egg whites1 cup applesauce2 TBS oil (light olive oil is best)1 tsp vanilla
Directions
Pour into muffin cups using foil baking liners. Fill just 1/4" down from top of liner. Bake at 350 degrees for 20 minutes.
