Baked Chicken with Spinach, Pears and Feta

Ingredients
1lb chicken breast,without skin3tbsp chicken broth, divided2tbsp Cider Vinegar1/2c diced red onion (80g)6oz spinach (fresh)1 pear (166g), cut into 1/2" thick slices2tbsp fresh parsley (2tsp dry)1oz feta,fat free
Directions
Season chicken with salt and pepper. In large skillet heat 1tbsp broth, add chicken and sear 2-3mins.

2. Bake in oven at 375 for 15mins
3. While cooking heat 1tbsp broth over med heat and saute onion until softened (2-3mins) Add spinach until wilted, seasoning with salt and pepper. Set aside and divide evenly onto plates
4. Heat remaining 1tbsp broth with vinegar. Add pears and gently warm. Stir in parsley.
5. Arrange chicken on spinach. Top with pear and then 1/4 feta cheese
