Crockpot: Chipotle and Lime Chicken Breasts

4 Boneless Skinless Chicken Breasts (about 5 ounces each breast)1 Chipotle Pepper, Finely Minced (from can)2 Tbsp Chipotle Sauce (from can)2 Tbsp Fresh Squeezed Lime Juice1/4 Cup 0% Greek Yogurt1/2 Cup Light Sour Cream1 Package (10oz) Fresh Spinach1 Large Sweet Potato, peeled and diced in 1" cubes (not included in nutritional stats)
Skin sweet potato and cut into about 1 inch cubes. Mince Chipotle pepper. Place chicken breasts and sweet potatoes in crock pot. Mix together Chipotle pepper, Chipotle sauce, lime juice and Greek yogurt in separate bowl. Pour over chicken breasts and cook on low for 7-8 hours or high 3-4 hours. Remove chicken breasts and potatoes from crock pot and add spinach and sour cream to the remaining liquid. Cover and let cook on high for 5-10 minutes or until spinach has wilted. Pour creamy spinach mixture over chicken breasts and serve immediately with sweet potatoes.
