Megan's Chicken Marengo

Ingredients
Boneless skinless chicken breast1 14oz can Diced Tomatoes1 8oz can Tomato Sauce1 4oz can Black Olives1 medium Zucchini1 green bell pepper chopped1/4 white onion, chopped1 tbsp basil2 tbsp balsamic vinegar1 tsp oregano1/2 tsp rosemary3 cups whole wheat penne
Directions
Cut chicken into 1 inch cubes. Sautee in 10 inch skillet with diced pepper, onion and balsamic vinegar. When chicken is thoroughly cooked, add diced tomatoes, sauce, spices, zucchini and olives. Simmer for 10-15 minutes. Boil penne according to package directions. Spoon chicken and sauce over cooked penne.

    I added garlic powder and used olive oil, while substitutin the rosemary and oregano for Italian seasoning. We loved the taste. Will make again - 3/11/10
