Carrot Cake Oatmeal

Ingredients
1/2 cup old fashioned rolled oats1/2 large ripe banana1/2 cup shredded carrot2 tablespoons raisins3/4 teaspoon cinnamonhefty dash of nutmegdash of salt2 teaspoons organic maple syrup or natural sweetener of your choice (optional)1 tablespoon unsweetened shredded coconut1 tablespoon raw sunflower kernels (optional) 3/4 teaspoon Nutvia extra virgin coconut oil (1/2 to oil the baking dish & half to put in with the ingredients)1 cup unsweetened almond milk
Directions
Preheat oven to 380F degrees. Oil a 4 cup Pyrex bowl with 1/2 of the coconut oil and set aside.
In another bowl mash and mix first 11 ingredients together until well incorporated. Add almond milk and mix again. Pour into prepared Pyrex dish and bake 40 minutes.
