Mushroom Turkey and Rice Casserole

2 Tbsp olive oil1 pound crimini or white mushrooms1 cup sliced celery3/4 cup sliced green onion2 cloves garlic, minced1 tsp each thyme leaves, salge leaves and salt1/2 tsp pepper4 cups cubed cooked turkey breast4 cups cooked rice2/3 cup chicken stock1/2 cup pecans chopped coarsely2 tbsp chopped parsley (optional)
In large skillet, heat oil over medium heat. Add mushrooms, celery, onions and garlic. Saute for 3 minutes. Stir in spices. Saute for 2 minutes. Add chicken stock. Remove from heat and set aside. In 2.5-3 quart casserole dish combine turkey, rice and pecans, stir in mushroom mixture. Bake at 350 oven for 25 minutes or until heated through. Garnish with parley.
A combination of brown and wild rice can also be used for a wilder flavour.
