8 large eggs1 package cream cheese 12 tsp Splenda1/2 tsp cinnamon1 tsp vanilla extract Your preparation is the most important step in these amazing low carb pancakes. Separate the eggs, egg whites in one bowl and egg Yolks in one bowl. Beat the egg whites with a mixer until firm peaks are present. Beat egg yolks until slightly creamy. Only a couple of min or so. Now take all other ingredients and combine in a third bowl. Beat until well mixed. Fold in eggs whites and then fold in egg yolks. Make sure your pan is nice and hot. I use non-stick spray. turn your heat down on low once the pan is hot. These will burn very fast so cook all on low! Cook just like pan cakes, transfer to a cooking rack and serve warm. I love butter and some sugar free syrup on mine!
