Spinach Jalepeno Dip

1 tbsp butter2 tbsp flour1 cup milk3/4 cup sour cream2 cups shredded cheddar1/4 pickled jalapeno, chopped1/2 green pepper, chopped1/2 package frozen spinach, squeezed dry1/8 tsp cumin1/8 tsp chipotle pepper1/4 tsp salt
Heat butter, add flour. Slowly add milk, stir until thickened.
Add sour cream, cheddar, peppers (both), spinach and seasoning. Heat and stir on low until cheese is melted and starting to bubble. Serve warm with tortilla chips.
Makes about 2 1/2 cups dip, serving size is per tablespoon.
