Broccoli and Cheese Frittata

1 cup cooked, chopped broccoli1 cup shredded cheddar cheese6 fresh eggs, beaten
Pre-heat oven to 350 degrees and spray 8 cups in a 12 cup muffin pan
Cook and drain broccoli, spoon evenly into the 8 cups. Beat eggs and pour evenly over the broccoli
Bake 8-10 minutes, then sprinkle with shredded cheese. Bake another 10 minutes.
Serving Size: Makes 4 servings of two frittatas each
