Easy Chicken Leg & Thigh Stew

3 chicken thighs, skin removed3 chicken drumsticks, skin removed1 large onion chopped3 cups of mushrooms, chopped1 bag of frozen veg2 chicken stock cubes1 litre waterdried herbs such as parsley, thyme or sage. pinch of salt & pepper (optional)1-2 tablespoons of cornflour dissolved in a small amount of water
As you are removing the skin on the ckicken there is no need to sautee them - just add to a large pot, add chopped onions, mushrooms, chicken cubes desolved in water and dried herbs, salt & pepper and simmer over a low heat until meat is tender. Add frozen veg and dissolved cornflour towards end of cooking just allowing enough time for veg to become tender follow packet instructions, & increase temp if required for veg. Serve with a side of potatoes, rice or on it's own if you wish.
