Carrots, Peppers (green and red), onion, sweet potato, yucca root, celery, 1 medium potato, 3 garlic cloves, italian seasoning to taste and stir all with 2 tbs of olive oil.
place the veggies in a roasting pan covered for 45 min at 375°. then remove cover for last 15 min.
