Tad's Twice Baked Potato

1 - large baking potato1 -oz Chevre Goat Cheese.25 - tsp No Salt.5 - tbsp Black Pepper.25 - tsp McCormick Perfect Pinch Vegetable Seasoning.25 - cup Skim Milk2 - tbsp Smart Balance Buttery Spread (Light)
Clean baking potato and to speed up the process, Microwave it until tender (approx 8 minutes depending on your microwave).
Cut the potato in half long ways and outline cut around the skin on the inside. Leave enough so the potato is rigid and set them aside for a moment.
Dig out "guts" with a spoon and put them in a small mixing bowl.
Add all of the ingredients and mash the contents of the bowl to the consistency you like for mashed potatoes.
Put the mashed ingredients back into the two halves of the potato skins.
Heat oven to 400 and put potato halves in uncovered for 20 minutes or until there is a slight browning of the "guts" on the edges.
Remove and serve hot.
Serving Size: Makes 2 servings
