Super Simple Mini Twice Baked Potatoes

Ingredients
- 20 or so miniature red potatoes (about 1.5 lbs)- 1/4 cup milk- 1/4 cup shredded cheddar cheese- 6 tbsp. light sour cream- 2 tbsp. soft margarine- 2 cloves garlic, minced- 1/2 tsp. salt- 1/4 tsp. black pepper- 1/4 tsp. cayenne pepper- Parsley flakes (optional)
Directions
- Poke holes in the potatoes with a fork, and microwave 5-6 minutes.
- Let cool briefly, then cut potatoes in half length wise.
- Scoop potato out of shells into bowl, and set shells aside.
- Beat on high 30 seconds with mixer.
- Add margarine, sour cream, and garlic and beat until smooth.
- Add milk gradually, beating until smooth.
- Add spices and cheese, beat until mixed well.
- Fill each potato shell with mixture.
- Microwave 1-2 minutes, or until cheese melts.
- Garnish with parsley (optional).
