Ingredients
* 2 Chicken Breast, no skin, pounded thin * Salt, 1 dash * Pepper, black, 1 dash * Garlic powder, 1 tsp * Onions, raw, .5 medium chopped * 1 tbsp water * Maple Syrup, 5 tbsp * *Grey Poupon Dijon Mustard, 1/4 cup * Garlic, 3 cloves minced * *White Rice, medium grain, 1 cup
Directions
I found this recipe on Cooking Light and tweaked it a bit . . .

1. pound the chicken breast until thin

2. Season the chicken with salt, pepper and garlic powder

3. Pan sear on medium/high heat using PAM

4. Remove from heat once cooked through

6. Add onions and garlic to hot pan and saute til soft

7. Add water, mustard and maple syrup and cook through.

8. Plate: 1/2 cup of cooked rice, 1 chicken breast and then drizzle the sauce over the chicken.

You can save some calories by using less sauce. The sauce tastes great with the rice. Use less with the dish and save the leftover for another meal.

    I let the chicken rest in the fridge for a couple hours with the garlic powder/salt/pepper rub before cooking and the flavor was superb! I served it with a simple salad with maple/mustard dressing, my husband LOVED it! - 6/27/13

    I am not the best cook, I fudged up the directions just a bit but this still turned out really good. I was only cooking 1 chicken breast so I halved all the ingredients and had whole wheat couscous on the side - it kinda reminded me of general tso's chicken-I will definitely be making this again :) - 5/24/11
