Rub for lamb roast

Amounts are relative ... depends on the size of your roast.You want enough to cover evenly, but not crust.2 T dried mint flakes2 T dried rosemary2 T garlic powder1 T Accent seasoning salt2 tsp black pepper2 T kosher (or other coarse) salt
Grind the mint and rosemary with a mortar and pestle until powdered. Mix with the remainder of the spices.
Dry your roast well with paper towels, and coat with the rub thoroughly over all surfaces of the roast. It should cover completely, but not so heavily it's falling off.
I roasted mine in a rotisserie.
Serving Size: For a lamb sirloin or shank roast
