Whipped Sweet Potato Casserole

2 pounds sweet potato, peeled and cubed2 tablespoons orange juice3/4 cup brown sugar (1/4 cup + 2 Tbsp Splenda Brown Sugar)1/4 teaspoon ground nutmeg2 tablespoons butter, cubed1/2 teaspoon cinnamon1/2 teaspoon vanilla extractOptional:1 cup miniature marshmallows
1. Preheat oven to 350 degrees
2. In a large saucepan cook sweet potatoes in salted water over medium-high heat for about 20 minutes, or until done. Drain, and add orange juice, brown sugar, nutmeg, cinnamon, vanilla and butter. Whip until smooth. Spread into a medium size casserole dish and top with marshmallows (if wanted).
3. Bake into preheated oven for about 10 minutes, or until marshmallows are golden brown (if added).
