Fresh Pumpkin Pie

For crust:1 cup flour1/4 tsp. salt1/2 cup shorteningIce waterFor filling:1 1/3 cup smooth pumpkin, baked from fresh pumpkin1 1/3 cup sweetened condensed milk1 egg1 1/4 tsp. cinnamon1/2 tsp. nutmeg1/2 tsp. ground ginger1/4 tsp. round cloves3/4 cup hot water
Preheat oven to 375 degrees. Combine flour and salt. Cut in shortening a little bigger than the size of peas. Gradually add ice water to form a soft dough.
Press into a disc, cover in plastic wrap and refrigerate for 10 minutes. Make filling.
Beat all ingredients together until smooth.
Roll disk out into large flat circle. Very carefully place inside pie pan. Add filling. Bake for 55-65 minutes. Center will still move slightly. Cool completely in refrigerator.
Serving Size: Makes 8 slices
