2 cups flour3/4 tsp cinnamon1/4 tsp nutmeg1/2 tsp baking powder3/4 tsp baking soda1/2 cup canola oil3/4 cup sugar1/2 cup water 1 cup pumpkin puree (Libby's preferred)1/2 to 3/4 cup craisins (as desired)1/2 to 3/4 cup walnuts (as desired)Stir together oil, water, pumpkin, sugar and vanilla. In another bowl, mix together flour, baking powder, baking soda, salt, spices, craisins and nuts (if desired.) Fold flour mixture into pumpkin mixture just until blended. Pour into loaf pan or makes 12 muffins.
350 oven - 60 minutes or until toothpick comes out clean.
