1 onion chopped1 bell pepper chopped2 tbsp olive oil2 tsp chili powder1 tsp cumin2 tbsp sea salt64 oz chicken stock1 can corn1 can black beans1 can rotel tomatoes
Saute Onion and Pepper in Olive Oil, with spices. Transfer to soup pot, add chicken broth, and 1 can corn, 1 can black beans, one can rotel tomatoes, and the meat of one rotisserie chicken. Bring to boil, and simmer 45 minutes.
