Slow Cooker Green Chile Pork

Ingredients
2 Tbsp ground cumin1 tsp cayenne pepper1 Tbsp salt1 Tbsp chile powder1 boneless pork roast (3 lbs)3 (4 oz each) cans diced green chilesjuice of 2 limes9 cloves garlic, crushed1 cup low-fat, low-sodium chicken broth1 medium onion, diced1 Tbsp minced fresh cilantro
Directions
Combine spices and rub over pork - can be done the night before and refrigerated.

Place pork into slow cooker. Combine remaining ingredients and pour over meat.

Cook on low for 7-10 hours. Remove meat from crock and lightly shred with a fork - it should fall apart if it's done. Place back into crock and stir. Drain juice from meat and serve with tortillas or rice and any other toppings you want.

** Nutritional information is calculated based on all ingredients. Once you drain the meat, I imagine the fat and sodium content is reduced a bit but it's hard to tell how much.

My kids love quesadillas made with this pork and cheese.

    This is absolutley delicious I dont use the onion or whole garlic. I sprinkle the meat with garlic salt instead. This meal is absolutley delcious - 5/7/08
